New Zealand Baby Scallops - Queen (Chlamys delicatula)

New Zealand’s finest Baby Scallops are harvested wild from the sparkling crystal clear waters of New Zealand’s unpolluted southern Pacific Ocean. These baby scallops are not farmed or cultivated in any way and have been brought to you just as nature intended, snap frozen within moments of harvest to retain the fresh delicate flavours held within.

Available in whole shell or half shell, packing IQF in either our ‘The Scallop Factory’ brand, or the customer’s own in-house brand. Additionally we can provide you with specific packaging requirements including retail packaging options.

Size Grading:

• Whole shell 36-38 per kg (16-18 per lb)
• Half shell 50-55 per kg (24-26 per lb)

Packing:

• Whole shell – IQF 5kg (11 lb)
• Half shell – IQF 20 dozen
• Retail Packaging: provided as per customer’s requirements.

Storage:

• Product to be kept frozen at minus 18 degrees Celsius (-0.4F)

New Zealand Ribaldo Cod (Mora moro)

Mora moro, also known in some countries as Ribaldo is a very white cod with an average length of 20-50 cm and weight of between 2-5 kg. Mora moro is extremely moist, of firm texture and medium flavour.

Mora moro is caught between 300-700 metres in the cold Southern Ocean of New Zealand. This premium New Zealand product is rapidly blast frozen and is suitable for most cooking methods.

Packing:

• Each fillet/loin is individually wrapped in plastic and packed IQF in 5kg (11 lb) boxes.

New Zealand Pearl Cod (Hydrolagus sp)

Pearl Cod is a very white boneless fillet with a firm texture, from the Chimaera family (hydrolagus sp). Pearl cod is a very mild flavoured fish that is caught in waters off New Zealand up to a depth of 800 metres. This premium New Zealand product is rapidly blast frozen and is suitable for all cooking methods.

New Zealand Monk Fish (Kathetostoma giganteum)

New Zealand Monk fish is caught in the cold southern ocean of New Zealand up to 600 metres in depth.

The flesh is pearly white and of firm texture and will not flake easily. The taste is similar to rock lobster with an average size of 30-50cm and weighting approximately 2kg. This premium New Zealand product is rapidly blast frozen and is suitable for all cooking methods.

• Available in tails or skinned and boned, individually wrapped in plastic and packed IQF in 5kg (11 lb boxes)
